Toffee & Dark Chocolate Chunk Bacon Fat Cookies
A cookie for my fellow savoury sweet lovers. These cookies are made using brown butter and rendered bacon fat. I’m big on no food waste so for any households that go through a fair bit of bacon, this could be the answer for all that leftover bacon fat. I’ve packed the cookie dough full of toffee shards, dark chocolate chunks and finely diced crispy bacon. The result is a chewy cookie with a crispy edge and pools of rich chocolate and butterscotch toffee.
Espresso Double Chocolate Rye Cookies
These cookies are all my favourite things in one; brown butter, espresso and white chocolate. A very luxurious and adult cookie. They’re on the thinner side but stay beautifully gooey in the middle with a little crisp on the edges.
Ginger White Chocolate & Rye Cookies
I love that you bite into these cookies and hit a melty morsel of gingery white chocolate just sitting amongst an unassuming cookie dough. I think the addition of dark rye flour contrasts really well against the sweetness from the chocolate and gives these sweets a bit more body.
Crinkle Cut Crisp & Honeycomb Choc Chip Cookies
The wholesome cookie has had a salty makeover. I love a salty sweet treat and I loved the idea of honeycomb and crunchy, salty crinkle cut crisps together. The perfect conveyor for this? A chocolate chip cookie. These are soft in the middle and crisp around the edge. The honeycomb becomes chewy as it bakes in the oven and the crisps stay salty and crunchy. Pair all of that with some gooey dark chocolate and you have a bloody good cookie.
Brown Butter, Espresso, Choc Chip Duo Cookie
Why choose between two cookies when you can have both?!
