Apple & Thyme Fat Sausage Rolls
The humble sausage roll in all it’s glory. It’s a staple in our household, especially for my Fiancé. I think he would eat them everyday if he could! I adore a homemade sausage roll, but I mainly made these for him. I like either a mini sausage roll or a massive one, preferably the size of my hand. These are elevated by making a gorgeously buttery rough puff pastry and, although you can use shop-bought puff pastry in a pinch, I think it’s completely worth the extra effort.
Pecan Tarts with Muscovado Cream
It’s officially comfort food season, and I don’t know what’s more comforting than a gooey pecan tart with a little mountain of soft muscovado whipped ganache on top.
Mini Blueberry Galettes with Brown Sugar Mascarpone Cream
These are my blueberry galettes with brown sugar mascarpone cream and a hint of orange. They’re crisp, flaky, fruity and creamy. The orange just hums along in the background really marrying the blueberries with the brown sugar in the cream. I piped a thin layer of cream cheese underneath the filling to give it a bit of a cheesecake vibe. A lovely alternative to a big pie and quite pretty I think.

Twice baked pecan frangipane & chocolate croissants in bed on a lazy weekend morning. Warm flaky croissants soaked in a citrus syrup, gooey pecan frangipane and melty dark chocolate. Heaven!
Cherry Lemon Meringue Pie
Flaky golden pie crust, smooth and creamy baked lemon filling and a bright purple cherry compote. All finished with a delightfully light torched italian meringue. The perfect seasonal lemon meringue pie.
