Spiced Sticky Pear Puddings with a Brandy Toffee Sauce
These spiced sticky pear puddings with a brandy toffee sauce are what my dessert dreams are made of. These are essentially a sticky toffee pudding with added spices, pear and a very generous few glugs of warming brandy into the sauce.
Plum & Apple Oat Pecan Crumble
Few things bring me such joy and comfort as a steaming bowl of crumble with lashings of thick cream. There’s nothing like it to finish off a Sunday roast. I love adding in any seasonal fruit that’s available alongside the usual bramley apples. This crumble is one of my favourites. It has a punchy plum and apple filling with a salty oat crumble topping sprinkled with chopped pecans. A simple but delicious bowl of warmth.
Honey Roasted Nectarine & Cardamom Karpatka
I didn’t think my love for this polish dessert could get any bigger, but you add in honey roasted nectarines and a fragrant cardamom diplomat cream and it might just be my idea of heaven.
Brown Sugar, Coffee, Chocolate Custard Tart
There’s something so satisfying and pleasing about a clean slice of custard tart. This tart looks simple but packs in a lot of technique and flavour. None of the flavours overpower each other in this, they just dance along together in harmony encased in a silky custard.
Pregnancy-Friendly Tiramisu
I’m currently 26 weeks pregnant and every single restaurant I’ve been to recently has had Tiramisu on the menu. It’s been absolute torture not being able to have any (especially when my partner still orders it!) So I bring to you, a pregnancy-friendly Tiramisu recipe: no alcohol, decaf coffee and British Lion eggs. It’s very important to use British Lion eggs as they’re safe to eat when used in a cream like this (as they’re not cooked.) Feel free to use this recipe even if you’re not pregnant and add back in the caffeine and some alcohol into the syrup.
Thailand - Mango Sticky Rice
This week for ‘Baking around the world’ we’re in Thailand! I get excited every time I get to make something from a country so vastly different from the one I grew up in. It often means that their desserts are vastly different too. If you have ripe mangoes available, this is a perfect fresh dessert. It’s also an absolute breeze to make!
