Brown Butter Glazed Doughnuts with a Hazelnut Chocolate Crunch
Doughnuts are a food that brings me complete joy. I love making them, frying them and of course, eating them. A really good, simple glazed doughnut can’t be beaten. These brown butter glazed delights are so light, it’s difficult not to guzzle them all up at once. They look like little pillows. The hazelnut chocolate crunch adds that extra texture I sometimes miss with a glazed doughnut as well as some added nutty flavour. A real treat and a lovely baking project for a weekend.
Rhubarb & Honey Mascarpone Custard Doughnuts
Undoubtably, doughnuts are my weakness. I can’t resist a fresh, soft doughnut. I love the way everything seems to get a showering of sugar as it rustles off between bites. Along with the fact that doughnuts are one of my favourite baked goods, add rhubarb to the mix and these couldn’t be more perfect. I’ve filled them filled to the brim with a tangy compote and the most luscious mascarpone custard filling. A real treat.
Lemon Poppyseed Crullers
Sometimes all you need is a fresh doughnut, but sometimes you just don’t have the time or patience to make them. There’s making the dough, leaving it to rise, rolling, cutting and then leaving them to prove again. Here’s where the Cruller comes in: choux paste that’s fried to a deep golden before being dunked in a thin lemony glaze. Top with a sprinkling of poppyseeds and fresh lemon zest and they’re irresistible.
Caramel, Custard Valentines Doughnuts
Soft, pillowy doughnuts filled with super light custard and raspberry preserve. All finished off with a crisp caramel top. Of course they’re heart shaped, the perfect gift for your Valentine.
