Carrot Cake Sundae with Salted Toffee Sauce & Candied Pecans
An absolutely insane way to use up leftover carrot cake! I often have cake trim leftover from leveling sponges and making them into ‘soft serve’ style ice cream is my new favourite thing! This can be done with any leftover cake but since I had carrot cake, I paired it with a rich salty toffee sauce and some brittle crunchy candied pecans. Absolute heaven!
Pecan Tarts with Muscovado Cream
It’s officially comfort food season, and I don’t know what’s more comforting than a gooey pecan tart with a little mountain of soft muscovado whipped ganache on top.
Strawberry Pecan Frangipane Bostock
An easy but delicious way to elevate your breakfast table. Take thick buttery slices of brioche, soak them in a simple citrus syrup and spread on a generous layer of pecan frangipane. Top with ripe sliced strawberries, flaked almonds and pecans before baking until golden. They’ll be a little crisp on the edges but gorgeously soft in the middle. I finish mine with a pile of strawberries which have been mixed with sugar so they’re glossy and sweet. Best eaten warm from the oven.
