Apple & Thyme Fat Sausage Rolls
The humble sausage roll in all it’s glory. It’s a staple in our household, especially for my Fiancé. I think he would eat them everyday if he could! I adore a homemade sausage roll, but I mainly made these for him. I like either a mini sausage roll or a massive one, preferably the size of my hand. These are elevated by making a gorgeously buttery rough puff pastry and, although you can use shop-bought puff pastry in a pinch, I think it’s completely worth the extra effort.
Thailand - Mango Sticky Rice
This week for ‘Baking around the world’ we’re in Thailand! I get excited every time I get to make something from a country so vastly different from the one I grew up in. It often means that their desserts are vastly different too. If you have ripe mangoes available, this is a perfect fresh dessert. It’s also an absolute breeze to make!
Super Seeded Loaf
If you love sourdough but don’t have the time (or memory to remember to feed it) then this is a delightful alternative. This delicious golden loaf is made using a preferment and takes 3 days from start to finish. Don’t be put off by the long prep time, it’s mostly waiting and hardly any ‘active’ time. This recipe makes two loaves which makes all the effort worth it as you can keep one sliced in the freezer for fresh bread whenever you like!
Cyprus - Flaouna
A typical easter bake from Cyrpus, Flaouna is a delicious cheese pastry filled with mint, raisins and herbs. The dough is coated in white sesame seeds before adding in the filling which gives these a delicious nutty flavour. If you can, get your hands on the traditional spices (I’ve included some substitutions in case you can’t.)
