Brown Butter Glazed Doughnuts with a Hazelnut Chocolate Crunch

Doughnuts are a food that brings me complete joy. I love making them, frying them and of course, eating them. A really good, simple glazed doughnut can’t be beaten. These brown butter glazed delights are so light, it’s difficult not to guzzle them all up at once. They look like little pillows. The hazelnut chocolate crunch adds that extra texture I sometimes miss with a glazed doughnut as well as some added nutty flavour. A real treat and a lovely baking project for a weekend.

Autumnal Apple & Date Baked Oats

An autumnal twist on my favourite baked oats recipe. It’s got apple grated into the oats as well as chopped apple on top, which has a nice crunch to it. The oats are scented with warming spices and sweetened with mashed bananas and soft dates. They’re a perfect make ahead breakfast and my toddler loves them too! They stay nice and gooey in the middle. My preferred way to have them is warm with thick yoghurt.

My Favourite Three Cheese Scones

I absolutely love this cheese scone recipe. So much so, I wasn’t actually sure if I wanted to share it! They’re perfectly cheesy with a real depth of flavour from three types of cheese, mustard and worcestershire sauce. They get their beautiful shine from two egg washes. They make the perfect accompaniment to soup or a perfect snack, warm with salted butter.

Spiced Oat & White Chocolate Maple Glazed Cookies

As soon as I smelt these cookies baking in my oven, I knew I’d love them. They’re delicately spiced, soft and chewy. They’ve got some texture from the oats and the gooey white chocolate. They’re rolled in sugar before baking to give them a crackly top which clings to the maple glaze in a fashion that reminds me of a desert landscape. I think they’re so beautiful in their simplicity and will be a recipe I’ll make time and time again.

Fig & Honey Mascarpone Cardamom Buns

I've put together my dream pastry. Its a cardamom milk bun, rolled in sugar and filled with fig jam and a honey mascarpone cream. I honestly couldn’t think of anything better than hunkering down with one of these and a hot coffee as the days turn colder.

Plum & Apple Oat Pecan Crumble

Few things bring me such joy and comfort as a steaming bowl of crumble with lashings of thick cream. There’s nothing like it to finish off a Sunday roast. I love adding in any seasonal fruit that’s available alongside the usual bramley apples. This crumble is one of my favourites. It has a punchy plum and apple filling with a salty oat crumble topping sprinkled with chopped pecans. A simple but delicious bowl of warmth.
