Strawberry & Fennel Jam Chocolate Thumbprint Cookies
These cookies are full of surprises. The strawberry jam is scented with a light whisper of fennel and the chocolate cookie dough just melts in your mouth. The middle stays a little soft and reminds me a bit of a dense brownie in its buttery texture. I coated half of the cookies in crunchy demerara and half in white sesame seeds for a nutty kick. They both work really well. If you’re looking for an easy bake which packs a punch of flavour, these are for you. I love the strawberry fennel jam so much, it will probably become a fridge staple for me.

My current breakfast fixation; pear, almond & chocolate baked oats its gooey, nutty, and rich with little pockets of sweet soft pear scattered on top. I've made it 3 times in a row already.

There’s something so satisfying and pleasing about a clean slice of custard tart. This tart looks simple but packs in a lot of technique and flavour. None of the flavours overpower each other in this, they just dance along together in harmony encased in a silky custard.
Simple Silky Hot Chocolate
A really easy way of making a silky and luxurious hot chocolate. This is my favourite drinking consistency; not so thick that it feels like you’re drinking liquid ganache, but not so thin it tastes too milky. I like to use a mixture of milk and dark chocolate so that you have depth of flavour as well as a little sweetness.
Millionaires Shortbread
These are a real nostalgic treat for me. I’ve eaten them growing up at birthday parties, alongside a warming coffee as an adult and now I’m showing you how to make them at home! As with most bakes, homemade just tastes better. Using good quality ingredients, especially chocolate, make a world of difference here. Although these do have quite a few components to build up the layers, they’re all quite easy recipes to follow. So knock up a batch for your next coffee date and enjoy!
