Pear, Almond & Chocolate Baked Oats

My current breakfast fixation; pear, almond & chocolate baked oats its gooey, nutty, and rich with little pockets of sweet soft pear scattered on top. I've made it 3 times in a row already. I usually NEVER weigh anything in cups as it’s not accurate. However, I love using them in breakfast recipes where it doesn’t need to be to the gram and it means I can throw it together really quickly.

Recipe: serves 6
2 large ripe bananas
2 eggs
2 cups porridge oats
1/2 tsp salt
2 tbsp cocoa powder
1 tsp baking powder
1 cup milk
1/8 cup maple syrup
1 large pear, peeled & chopped
6 tsp 100% almond butter

Method

Preheat your oven to 170°C.

Mash the bananas into a baking dish (I use an 18x12cm dish). Whisk in the eggs. Add in the oats, salt, cocoa, and baking powder. Lightly mix before adding in the milk and maple syrup. Mix to completely combine. Spoon over a few tsp of almond butter and swirl through. Scatter over the chopped pear and bake for 25 minutes. It should be slightly puffed, set at the edges, but still gooey in the middle.

Leave to cool slightly before slicing into 6 and serving with yoghurt. It can be kept in the fridge for 5 days and reheated in the microwave.
