Three Spring Recipes
Carrot cake screams ‘spring’ to me, and by adding some golden caramel into the frosting, you have a classic with a twist that (trust me) you’ll keep reaching for. It’s also worth taking advantage of dried and fresh edible flowers right now to give your desserts an elegant and unique finish that looks really impressive. And for those of you hosting this weekend, a pavlova is the perfect dessert to prepare ahead of time; simply assemble its parts when you’re ready to plate. They’re also the ideal blank canvas for vibrant rhubarb while it's in season. Finally, in those moments of downtime, I’ll be relaxing with a moreish honey madeleine alongside an afternoon cup of tea.
Greece - Portokalopita
A delicious alternative to your average cake, packed full of orange flavour and really easy to make. You start out by tearing the Filo Pastry and leaving it to dry for a few hours before soaking it in custard. Once its baked, drench the entire cake in cinnamon infused orange syrup. Heaven!
Lithuania - Medaus Tortas
A tasty cake layered with honey biscuits & lemon sour cream filling. Delish!
Mexico - Tres Leches Cake
This was the first time I had tasted Tres Leches Cake and I have to admit, I was quite apprehensive at first. I really though it was going to be way too sweet for me with all the condensed and evaporated milk. But I was so wrong! I absolutely adored this cake, I found it so moreish and couldn’t stop going back for more. My boyfriend loved it so much, he’s requested it for his birthday this year!
Denmark - Brunsviger
Hands down, one of my favourite things I've made in the last few months. A must try! I couldn't get enough. Why have I never made it before?! Who knows. Just know I'd make it again in a heartbeat.
Germany - Maulwurfkuchen
A traditional German cake, often eaten for birthdays. Maulwurfkuchen translates to ‘Mole Hill’ and I’m sure you can see why. It consists of a chocolate sponge which is hollowed out before being filled with sliced banana. It is then topped with the biggest mound of whipped cream you’ve ever seen (speckled with crunchy chocolate flecks) and finished with the chocolate crumbs that were scooped out earlier.
