Plum & Apple Oat Pecan Crumble
Few things bring me such joy and comfort as a steaming bowl of crumble with lashings of thick cream. There’s nothing like it to finish off a Sunday roast. I love adding in any seasonal fruit that’s available alongside the usual bramley apples. This crumble is one of my favourites. It has a punchy plum and apple filling with a salty oat crumble topping sprinkled with chopped pecans. A simple but delicious bowl of warmth.
Brown Butter, Chai Spice Banana Loaf
I love banana cake, I love brown butter, I love chai lattes and I also love dulce de leche. Put all of those things together and you have this lovely, comforting slice.
Salted Maple Pecan Waffle Ice Cream Sandwiches
These are my autumnal waffle ice cream sandwiches: banana waffles, salted maple caramel, toasted pecans, vanilla ice cream and a dark chocolate shell.
Mini Blueberry Galettes with Brown Sugar Mascarpone Cream
These are my blueberry galettes with brown sugar mascarpone cream and a hint of orange. They’re crisp, flaky, fruity and creamy. The orange just hums along in the background really marrying the blueberries with the brown sugar in the cream. I piped a thin layer of cream cheese underneath the filling to give it a bit of a cheesecake vibe. A lovely alternative to a big pie and quite pretty I think.
Dark Chocolate & Cherry Brown Butter Streusel Muffins
I’m not a huge muffin gal but every once in a while I get an itch for both making muffins and eating them. They’re low effort, high reward. So easy to make but my goodness they’re delicious. I like to think of these as my grown up muffins. The batter is buttery and light but it’s packed full of indulgent dark chocolate and juicy rich cherries. I’ve browned the butter in the streusel to add in some nutty caramel flavour and it makes for a really great muffin.
Chocolate Espresso Cheesecake
A perfectly decadent and rich chocolate espresso cheesecake that’s not too heavy. A chocolate speculaas biscuit base with a good pinch of sea salt to combat the sweetness. The chocolate cheesecake filling has a generous helping of good-quality dark chocolate and four shots of espresso. This really enhances those chocolatey notes. Once baked, it’s finished with a layer of silky smooth ganache made with both dark and milk chocolate for both sweetness and depth of flavour.
