Spiced Sticky Pear Puddings with a Brandy Toffee Sauce
These spiced sticky pear puddings with a brandy toffee sauce are what my dessert dreams are made of. These are essentially a sticky toffee pudding with added spices, pear and a very generous few glugs of warming brandy into the sauce.
Cocoa Nib & Pistachio Chunky Granola
This is my delicious and nutritious granola recipe. It’s chunky, crisp, packed full of flavour and lightly sweetened. I’ve used cocoa nibs, pistachios and flaked almonds in mine, but you can use whatever you fancy. The dates stay nice and chewy while the oats and nuts get lovely and toasted. This granola isn’t a very sweet recipe as that’s how I like it. I don’t want to be eating a tonne of sugar at breakfast, so I use a mixture of honey, butter and egg white to get it nice and crisp. It’s packed down as one even layer to bake which is then broken up once cooled to ensure it stays nice and chunky!
Vanilla Rice Pudding with Poached Quince
This is Autumn in a bowl. Rich, warm rice pudding speckled with vanilla bean adorned with ruby red poached quinces. Quince are a fruit I rarely get to use as they’re quite difficult to get hold of. I never see them in the supermarket! They require some love to get them ready to eat but it’s so worth it. Once poached in a fragrant syrup for 3 hours, they turn from hardy and bitter to a soft, aromatic fruit with a gorgeous scarlet colour.
Brown Butter Glazed Doughnuts with a Hazelnut Chocolate Crunch
Doughnuts are a food that brings me complete joy. I love making them, frying them and of course, eating them. A really good, simple glazed doughnut can’t be beaten. These brown butter glazed delights are so light, it’s difficult not to guzzle them all up at once. They look like little pillows. The hazelnut chocolate crunch adds that extra texture I sometimes miss with a glazed doughnut as well as some added nutty flavour. A real treat and a lovely baking project for a weekend.
Autumnal Apple & Date Baked Oats
An autumnal twist on my favourite baked oats recipe. It’s got apple grated into the oats as well as chopped apple on top, which has a nice crunch to it. The oats are scented with warming spices and sweetened with mashed bananas and soft dates. They’re a perfect make ahead breakfast and my toddler loves them too! They stay nice and gooey in the middle. My preferred way to have them is warm with thick yoghurt.
